Ingredients

1 handful peeled prawns
270 ml water
4-5 pieces galanga sliced (can you use ginger instead of galangal)
Half stalk lemongrass sliced in 3-4 cm lengths
2 kaffir lime leaves
1 shallot
2 small green chillies (pressed gently)
5 tsp fish sauce
3 tsp sugar
5 tsp lime juice
1tsp of Spirit of Attila chili sauce or
chili cooking steps

Steps

In a pot bring the water to a boil and add the Spirit of Attila chili sauce. Mix very well.
Add the fish sauce, sugar and lime juice, stir well
Add all the herbs. (galanga, lemongrass kaffir lime leaves, shallot, green chillies.
Bringing the soup to a boil add the prawns and simmer until cooked.
Put in a soup bowl and serve with glass noodles.
