Hot Chili sauce

1 tbsp vegetable oil
300g peeled king prawn
1 sml head broccoli , cut into small florets
1 red pepper, deseeded and sliced
4 garlic cloves finely chopped
100g sugar snap peas chopped
4tbsp Sweet Bite chili sauce
1 bunch of corriander
1 medium, peeled and very thinly sliced carrots
1tbsp dark soy sauce

Heat 1 tbsp vegetable oil in a wok or frying pan over a high heat and cook the garlic and prawns. Stir frequently for 2-3 minutes until the prawns are pink and cooked through. Transfer to a bowl and keep warm.
Add the remaining vegetable oil to the wok, then toss in the broccoli, red pepper, sugar snap peas ans carrot. Stir-fry for 3 minutes, until slightly tender.
Mix the soy and Sweet Bite chili sauce together and drizzle into the wok. Stir well to coat the veg, then add the prawn to the pan. Toss everything together and cook for 2 minutes, until it’s all heated through. Serve with rice or noodels.
